There should be a guide on the back, and you should be feeding him based on his ideal weight and take into consideration his amount of energy/exercise. If he is super active you may need to bump up the amount you feed him. He should be a good quality diet from a pet store.
Eating his own poop can be from not digesting his food enough, a behavioral issue, lacking something in his diet etc. You can get pills from the pet store that you feed him which can help stop this.
